Don’t Gnocc It owner and chef Tim has been cooking professionally since the age of 16 when he began his apprenticeship in his homeland of New Zealand. His love of Italian food was inspired during his apprenticeship in a small Italian café where he worked under an Italian chef by the name of Enzo. From there, Tim moved into fine dining working in a restaurant in the heart of Wanganui in New Zealand.
This was followed by a move to Europe where Tim travelled around Europe and spent 2 years in Munich, Germany working in kitchens and expanding his chef skills. After Europe, Tim spent 3 years in Western Australia building on his chef skills and acquiring management skills with a view of owning his own Italian restaurant eventually.
Before establishing his business on the Gold Coast, Tim worked at a restaurant in Southbank in Brisbane. You may have tasted some of Tim’s gnocchi at his food stall at Night Quarter. This allowed Tim to start small and get a feel for the market and for business before setting up his own restaurant.
With its beautiful beaches and relaxed vibe, Broadbeach on the Gold Coast, offered the perfect location to set up an Italian restaurant. Once some renovations were completed, Don’t Gnocc was ready to open its doors. Our goal is to create a restaurant that has the feel of Italy as well as the delicious food it’s famous for.

I have a huge passion for food. You’ll find me in the kitchen every day preparing the food, and at night you’ll find me in the kitchen cooking along with my long-time friend Jesse.

The next best thing to travelling to Italy, is to enjoy an Italian experience on the Gold Coast. We make fresh gnocchi in our kitchen every day! We are family friendly and you can even bring your well-behaved dog in our outdoor undercover seating area (we’ll give him/her a bowl of water).
Come for happy hour (3-6 pm Thursday, Friday, Saturday), enjoy a family night out, a romantic occasion, or gather a group and celebrate family, friends, and life with great food!
